Sweet Pear&Bacon Hash

Sweet Pear&Bacon Hash

Post WOD Meal or Breakfast

Serves 1

Cook&Prep Time: ~20 mins

Ingredients:

  • 4 slices of Pepper Bacon, cut in small pieces
  • 1/3 of a Sweet Potato (about ½ Cup), cubed
  • ¼ Cup of Yellow or Red onion
  • ½ small Pear

Directions:

  1. Cut Bacon into small pieces and cook in sauce pan on medium high heat until you reach desired crispiness.
  2. Remove bacon from pan with tongs and dry on paper towel. Set aside (covered, so the cat is unable to reach it, if necessary).
  3. Place sweet potato directly into pan with bacon grease and heat on medium heat for about 10 minutes until cooked fairly soft, and crispy on the outside.
  4. About 5 minutes in, add onion.
  5. With one minute remaining on the cook time, add pear just to heat up, but not get mushy.
  6. Remove from heat, add bacon and ENJOY!!

  2. Yummm…. Bacon!!! I love the photo too … picknic table and fall leaves — what a great place to enjoy a meal!! I made a chicken meal tonight, it was a Chicken Slaw — tasty, but best served cold. I do have Bacon and Beets on the menu for tomorrow — I just need to figure out how to cook a beet — recipe calls for a pressure cooker, and I’m fresh out of pressure cookers! Thank goodness for google!!

  3. Jake and I eat beets pretty frequently and we usually boil them in water for 45mins-1hr with a lid on them. Follow that with the fork test to make sure they are consumable and voila! (I’m fresh out of a pressure cooker, too! Next item on my Christmas kitchen wish-list! Okay, maybe the ONLY item…).

    Chicken slaw sounds yummy. Anyone else hungry non-stop?! Maybe it’s just me and my inevitable food-obsession this month!

  4. Thank goodness you posted this! I made it for breakfast because I COULD NOT EAT ANOTHER EGG CUPCAKE LOL. What I love about this dish is that it’s rich and delicious so not only are you full, but extremely satisfied with your meal. I’m hook on Paleo! I still feel extremely sluggish but I’m guessing that beause my body is still ridding it’s self of sugar and toxins, but otherwise, I feel fantastic!
