This option showcases the ease and versatility that comes with Paleo-on-the-go meals! Great job, ! The Helmes Family hits a home run on the team-work this week utilizing left overs and planning ahead with boiled eggs at the ready! 

Easy Steak Salad

Created and Designed by Aaron “Slim” Mary* Helmes

Ingredients:

  • Couple handfuls of Spinach
  • Little bit of Green Onion
  • 1 Hard Boiled Egg (I make a bunch at a time for easy grab & go)
  • 1 Roma Tomato, handful of Shredded Carrot
  • Handful of leftover Carne Asada (Beef seasoned w/ EVOO- Extra Virgin Olive Oil-& Fajita Spice)
  • A few slices of an Avocado
  • topped w/ a splash of Balsamic Vinaigrette & EVOO and a dash of Salt & cracked Pepper for fun.

BANG!! Lunch is served in less than 3 minutes!!

Quick, Portable, and Painless: Aaron took this a similar shakedown* to work (made it himself!) & put the vinegar & oil in a side dish. Way to be, Aaron (and Mary!!*). Good to see the working man still makes time to hunt and forage his lunch in this day and age (with help from his lovely lady*)

  1. HeeHee — this was my photo and recipe emailed — IDK if his 6am made salad looked so pretty :) I’m pretty sure he would have left out the toms and a few other things. But he did grill the steak the night before … so I’ll give him the point for a recipe blog :)

  2. Alright – gotta fess up, my salad wasn’t nearly that good looking, I think I missed a few key ingredients, but it was still pretty tasty. I can’t steal your point on this one when you did all the work! I’m glad Mary’s doing most of the cooking for this thing otherwise I’d probably be sitting over at Muchos Gracias by now!

    Blog post for the day:
    Tuesday night is date night, so we fell off the wagon — well not really, we had sushi — but then our car broke down and we ended up at Taco Tuesday with a pitcher of beer and a couple of soft tacos!! IDK how that happened …..

    But it was funny cause we woke up this morning and didn’t really feel in the Paleo mood — was it the grains taking over?? We forged on and cooked (together!) an egg scramble with red pepper and sausage. Hummmm,…. pretty tasty. Had to deal with the car today, so we ran around this morning — no time for lunch so I put leftover chicken breast between 2 pieces of lettuce and called it good — I think Aaron added mustard :) Exciting!! I have beef stew meat in the crockpot with red curry powder, can of coconut milk, 1/2 head of chopped purple cabbage and sliced sweet potato. Tonight is the night we usually hit Blind Onion (kids have dance for 3 hours right next door) So — I’m happy to have a crock pot meal going — I know we wont break and it will be ready the second we get home.

    We both feel really good when we eat this way — I don’t feel bloaded, not hungry, not full. I’m kind of getting tired of eggs in the morning — although Madison, your poatched eggs looked awesome of FB!! Anyone have any breakfast ideas besides the egg muffin – I think I’ve made them every which way …. ready to branch out a little bit :)

    • Mary–

      Can I just say I fell off the band wagon today too and had sushi! Oh it tasted so good, but I felt STUFFED afterwards and lethargic–didn’t like it! I haven’t felt that since last week! Definitely feel a notice in the not hungry but not stuffed full either. I like it.

      For breakfast I have to be up and out of the house pretty early in the morning. I bought some frozen turkey burgers from Whole Foods (take about 10-12 minutes to cook), and putting a peach salsa on top, and usually a small portion of fruit of some sort. Its pretty simple and a good switch up from eggs! I feel ya there too..I’m not used to soo many eggs!
